Stuffed Chicken Breasts

4 Skinless, boneless chicken breast halves, 1/4” thick
1 cup cooked brown rice
1/4 cup finely-diced fresh tomatoes
1/4 cup shredded Mozzarella cheese
3 tbsp roasted rice bran
1 tbsp chopped fresh basil
1/8 tsp ground black pepper
1 tbsp olive oil

Season the inside of pounded chicken breast with salt and pepper.  Combine rice, tomatoes, cheese, rice bran, basil, and black pepper.  Spoon rice mixture on insides of chicken breasts; fold over and secure sides with wooden picks.  Wipe off outsides of chicken breasts with paper towel.  Heat oil in a large skillet over medium-high heat.  Cook stuffed chicken breasts in hot oil 1 minute on each side/until golden brown.  Transfer chicken to shallow pan.  Bake at 350 degrees for 8-10 minutes.  Let stand for 5 minutes before slicing.
