Bacon and Blue-Cheese Dip with Crispy Potato Skins

5 lbs baking potatoes, washed and dried
1 lb bacon
6-oz blue cheese
2 tbsp olive oil
10-oz sour cream
1 tsp salt
  freshly ground black pepper

Preheat oven to 350 degrees.  Wrap potatoes in foil and bake for 1 hour. 

Cut potatoes in half and scoop out most of the potato, leaving a layer on the skins.  Cut skins into quarters and place on a greased baking tray.  Sprinkle with oil, salt, and pepper.  Increase oven heat to 400 degrees.  Return potato skins to oven for 10-15 minutes to crisp.  Meanwhile, grill bacon until crisp and crumble into small pieces.  Combine cheese and sour cream.  Stir in bacon, reserving a little for garnish.  Pour dip into a serving bowl and sprinkle with reserved bacon.  Arrange potato skins on a serving plat and place dip in the center to serve.  (Serves 6)
