Vegetable-Bean Salad with Pasta

 

SALAD:    
     
1 cup pasta
1 can (15/-oz) kidney beans
1 large stalk broccoli
1/2 lb snowpeas, trimmed
1/2 lb mushrooms, sliced
1 large sliced green pepper
1 large sliced red pepper
4-6   sliced scallions
     
DRESSING:    
     
1/4 cup olive oil
2 tbsp lemon juice
3 tbsp vinegar
2   crushed garlic cloves
1 tsp dried mustard
3/4 tsp tarragon
1/2 tsp salt
1/2 tsp pepper

DRESSING:

In a medium size bowl mix together olive oil, lemon juice, vinegar, garlic, mustard, tarragon, salt and pepper.  Whisk all ingredients until smooth throughout. Set aside.

SALAD:

Precook pasta, drain, place in refrigerator to cool.  Trim the flowerets off stalk of broccoli and place in a large bowl.  Add snowpeas, mushrooms, green and red pepper, and scallions.  Add Kidney beans, and lightly toss.  Add pasta. Add dressing and toss lightly again.  Serve.
