Garlic Soup with Chicken

1   whole chicken, cut-up
2   carrots, diced
2   stalks celery, diced
1   whole head garlic, broken into unpeeled cloves
1/2 cup chopped parsley
    salt, to taste
    pepper, to taste
    water
12 clove fresh garlic, peeled
2 tbsp butter
2 tbsp flour
    parsley for garnish

Make fresh chicken broth by simmering chicken, carrots, celery, onion, unpeeled garlic, parsley, salt and pepper in enough water to cover mixture.  Cook till chicken is tender.

Remove chicken and skim off fat from the broth.  Simmer broth till it is reduced and very rich.

Remove unpeeled garlic cloves from broth and squeeze garlic out of cloves.  Mash garlic to make a puree.

In frying pan, saute the 12 cloves garlic in butter till golden brown.  Add flour and a small amount of the broth and mix with wire whisk till smooth.  Pour this mixture along with the pureed garlic into broth.

Tear chicken into bite-sized pieces an add to soup.  Sprinkle with parley and serve.
