Sauce Remoulade

3   hard-cooked egg yolks
1/2 tsp salt
1/8 tsp pepper
1/2 tsp powdered mustard
1 cup olive oil
2 tbsp vinegar, to taste
1   shallot, minced
    parsley sprigs, chopped
1 tbsp minced chervil, gherkins, and capers

Force egg yolks through a sieve.  Blend with salt, pepper, and mustard.  Gradually heat in oil a few drops at a time, until all is added.  Add remaining ingredients and beat well.
