Sweet And Sour Sauerkraut Salad

1/4 cup oil
1/2 cup water
1/2 cup vinegar
1-1/4 cup sugar
1   green bell pepper, finely chopped
2 cups celery, finely chopped
1 large onion, finely chopped
1 large can sauerkraut

This salad is best made at least three days before you plan to serve it.

Combine oil, water, vinegar and sugar and bring to a boil.  Let cool.

Wash and drain sauerkraut.  Pour cool liquid over the sauerkraut.  Mix in diced vegetables and chill for at least 24 hours but preferably three days.  It will last up to two weeks and gets better with age.
