Mexican Lasagne

1-1/2 lbs ground beef
1 ea onion, chopped
1 can (1-lb) tomatoes with juice
1 can (10-oz) enchilada sauce
1 can (2-1/2 oz) ripe olives, drained
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 dz corn tortillas
1/4 cup salad oil
1 cup small curd cottage cheese
1 ea egg
1/2 lb Monterey Jack cheese
1/2 cup grated cheddar cheese
1/2 cup finely-crushed tortillas

 

Brown meat and onions.  Add tomatoes, enchilada sauce, olives, salt, pepper, and garlic powder.  Simmer, uncovered, 20 minutes.

Saute tortillas in hot oil to soften and cut in half.  Beat cottage cheese with egg.

Spread 1/3 meat sauce in 3-qt casserole, top with 1/2 the Monterey Jack cheese and 1/2 cottage cheese mixture, then 1/2 of the tortillas.  Repeat layer making the final layer the last 1/3 of the meat sauce.  Sprinkle on graded cheese and chips.

Bake in 350 degree oven for 30 minutes.
