Easy Pie Crust

1 cup sifted flour + a little extra
1/2 tsp salt
1 cup chilled shortening
1/4 cup ice water


Place flour and salt in a medium bowl.  Add shortening and cut in with a pastry blender or two knives until mixture resembles coarse meal.  Add water, a little at a time, tossing gently with fork after each addition.  Combine until mixture comes together and a soft dough is formed.

Sprinkle a little extra flour over the dough and coat hands with flour for easier handling.  Press half the dough into a pie plate, adding more dough if needed to form a uniform thin crust.  Excess dough can be used to make free-form lattice strips, if desired.

(makes two 8” crust; one 9” crust)
