New England Clam Chowder

6 slices bacon
2 ea finely diced medium onions
3 ea cubed medium potatoes
    salt
    pepper
2 can (6-oz) minced clams
2 bottles (8-oz) clam juice
1 pint light cream
    sherry (optional)

 

Cook bacon until crisp and set aside, reserving fat.  Place fat in a large saucepan, and pour in clam juice plus enough water to make 6 cups.  Add onions and potatoes, and simmer until potatoes are done.  Break bacon into small pieces, and add to potatoes and onions.  Season with salt and pepper.  Add undrained clams.  Mix flour with a small amount of cold water, and stir into chowder.  Add cream.  Serve warm, not boiling.  Season with sherry (optional).
