Chicken Breast Napoleon

3 ea whole chicken breasts, split
6 tbsp Mandarin Napoleon
2 tbsp melted butter
1/4 cup orange juice
1 clove garlic, crushed
1 tsp grated orange rind
1/4 tsp dried tarragon
1/2 cup chicken broth


Remove skin from chicken pieces.  Combine 3 tablespoons Mandarin Napoleon with all ingredients except broth.  Generously brush chicken pieces with mixture on both sides.  Place, meaty side up, on lightly greased, shallow baking pan.  Bake in preheated 375 degree oven for 15 minutes, then turn chicken and baste again.  Bake 15 minutes longer or until well-browned.

Arrange chicken pieces on a heated serving platter.  Skim fat from pan drippings.  Add broth and any leftover Mandarin mixture to pan.  Bring to boil, stirring to lift brown bits at the bottom.  Pour into heated sauce boat.  Warm remaining 3 tablespoons Mandarin Napoleon in a large ladle, ignite and pour over chicken.  When flames go out, serve with sauce.
