Hot Royal Pepper Chicken

1 lb chicken breast, cubed
    peanut oil
6 ea dry hot peppers
1/2 cup roasted peanuts, shelled
1 tsp chopped ginger
    sliced scallions for garnish
1-1/2 tbsp soy sauce
1 tbsp cornstarch
1-1/2 tbsp soy sauce
1 tbsp sugar
1/2 tsp salt
1 tsp sesame oil
1-1/2 tbsp vinegar
1 tsp cornstarch
1/2 tsp black pepper


Combine marinade ingredients and marinate chicken for a few minutes while combining the sauce ingredients.  Heat about 1/2” of peanut oil in skillet.  Add ginger, hot peppers, and chicken, and cook until chicken is brown. Drain most of oil and remove peppers.  Add sauce and peanuts.  Cook until thickened.  Serve over rice.
