Chicken Fajitas

1/2 cup Italian dressing
2 tbsp light brown sugar
1/4 tsp coriander
1/4 cup fresh lime juice
1 clove garlic, minced
1/4 tsp salt
1 lb chicken breasts, julienned
2 tbsp vegetable oil
1 med red pepper, julienned
1 med green pepper, julienned
1 lg onion, sliced thinly
2 ea tomatoes, coarsely chopped
8 ea flour tortillas
    Avocado dip
    Picante sauce
    Sour cream


Making Marinade:

Mix all ingredients for marinade.  Pour marinade over chicken in a bowl.  Chill overnight (8 hours).

Making Fajitas:

Heat oil in a large skillet (or Wok) over medium heat.  Remove chicken from marinade and pat dry with paper towels.  Stir-fry in batches for 3-4 minutes.  Push meat to side as it cooks.  Add peppers and onions and stir fry for 3-5 minutes, push aside.  Add tomatoes, stir fry for 2-3 minutes.  Meanwhile, warm tortillas in 350 degree oven for 10 minutes (wrap tortilla in foil).  Bring to table and fill with chicken mixture.  Serve with avocado dip, picante sauce, and sour cream.
