Chicken Luau

2 ea (2-lb) broilers, halved
1 cup melted margarine
    salt
2 tbsp soy sauce
4 ea bananas, halved lengthwise
2 ea mangos, seeded
1 can (13-1/2 oz) pineapple tidbits, drained
2 cans (16-oz) fruit salad
2 tsp cinnamon
4 ea thin slices of green pepper

 

Brush chicken on both sides with margarine and sprinkle with salt.  Mix remaining margarine and soy sauce.  Place chickens on barbecue grille and cook over low coals for 20-25 minutes on each side, brushing with margarine mixture frequently.  Place each chicken half on a large piece of foil and place a banana half on each side of the chicken pieces.  Place equal amounts of fruits on top of banana and around each chicken half.  Sprinkle the fruits with cinnamon and top each with a green pepper slice.  Wrap tightly, then return to grille and cook for 10-15 minutes longer.
