Duchess Potatoes

8 ea medium white potatoes, boiled and drained
3 Tbsp unsalted butter
    salt and white pepper to taste
3 Tbsp milk or light cream
1 ea egg plus 1 yolk, lightly beaten
1 ea egg beaten with 1 tablespoon cold water

 

Peel potatoes and mash.  Beat butter, salt and pepper, milk, egg and egg yolk into potatoes.

Preheat broiler.

Fill a pastry bag fitted with a rosette tip with potatoes.  Press potatoes into 16 rising circular shapes or other decorative shapes onto a greased baking sheet.

Brush with egg glaze and broil 5 inches from heat for 5 minutes or until browned.
