Hen Casserole For A Crowd

2 ea fryer chickens
2 cups uncooked yellow rice
1 cup chicken juices
1 lb sausage
2-3 ea stalks celery
2 lg onions
2 ea bell peppers
2 cans cream of mushroom soup
1 tsp poultry seasoning
    black pepper, to taste
    garlic, to taste


Bake or broil chicken until it can be pulled off the bone.  Reserve the juices.  Chop up the vegetables.

Brown sausage on top of the stove.  Add vegies and brown.  Drain grease.  Combine rice and 1 cup of chicken juices and add to vegies and sausage.  Add soup and seasonings.  Add half a soup can of water and continue to cook until rice is done.

Repeat a layer of rice and a layer of chicken in a casserole until the casserole is full – ending with the rice.

Place the casserole in the oven and cook at 375 degrees Fahrenheit for 45 minutes or until brown on top.
