Apple Dumplings

    Pastry for double pie crust
6 ea small Granny Smith apples, peeled and cored
1/2 cup sugar
2 tsp cinnamon
2 Tbsp lemon juice
2 Tbsp butter
2/3 cup brown sugar
2 cups water
1 cup sugar
2 Tbsp butter
1 tsp vanilla


Roll out pastry and cut into 8 large squares.

Combine sugar and cinnamon.  Brush each apple with lemon juice, then roll in sugar and cinnamon.

Place each apple on top of a dough square.  Fill each core cavity with brown sugar and a dab of butter.  Pull the dough edges over the apples and crimp to seal.

Place apple dumplings in a greased oblong baking dish.  Bake at 375 degrees for 30 minutes.


While dumplings bake, combine sauce ingredients in a saucepan and bring to a boil.  Boil for 1 to 2 minutes, then pour sauce over the top of the dumplings.

Bake dumplings in sauce for an additional 30 minutes, basting occasionally.

Serve with cream or ice cream.
