4 slices top sirloin, about 3/4-inch thick
2 Tbsp butter or margarine
3 Tbsp thinly sliced green onion
1 Tbsp Worcestershire sauce
2 Tbsp finely chopped parsley
2 Tbsp lemon juice
    dash salt

 

Place steaks between waxed paper and pound slightly with rolling pin or hands.

Melt 1 tablespoon butter in a pan.  Add green onions.  Sauté for a few minutes.  Stir in Worcestershire sauce, parsley, and lemon juice.  Heat through.  Keep warm.

Melt and heat remaining butter in another skillet.  Add steaks to pan.  Sauté quickly, about 2 minutes per side.  Sprinkle with salt and pepper.  Spoon the butter-onion mixture over steaks in pan.

At this point, you may flame the steaks, if desired.  Heat cognac or brandy, pour over steaks in pan.  Ignite.

Place hot steaks on serving dish.  Pour pan juices over.  Sprinkle with green onion and lemon peel.  Serve Immediately.

Herb-Marinated Loin of Beef

1 lb beef tenderloin or sirloin
1 Tbsp olive oil
1/2 cup chopped fresh parsley
2 ea cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp tarragon
1/2 tsp basil
1/2 tsp oregano

 

Brush oil evenly over beef.  Mix garlic and parsley with herb mixture.

Let stand for 20 minutes or prepare in morning and keep refrigerated until ready to cook.

Roast in heated 450° oven for approximately 15 to 18 minutes, or longer for well-done.

Slice and serve.

Steak With Stout Pan Sauce

5 tsp Dijon mustard, divided
2 ea (12-oz) New York strip steaks
2 tsp olive oil, divided
1 Tbsp butter, room temperature
2 tsp all-purpose flour
1 lg garlic clove, pressed
1/2 cup low-salt beef broth
1/2 cup stout (like Guinness)
1 Tbsp (packed) dark brown sugar
1 Tbsp soy sauce

 

Spread 1 teaspoon mustard over steaks; sprinkle with salt and ground black pepper.  Heat 1 teaspoon oil in large nonstick skillet over medium-high heat.  Cook meat about 4 minutes per side for medium-rare.  Transfer to plate; tent with foil.  Wipe out skillet.

Mash butter and flour in small bowl; set aside.  Heat 1 teaspoon oil in same skillet over medium-high heat.  Add garlic; sauté 15 to 20 seconds.  Add broth; bring to boil.  Whisk in stout, brown sugar, soy sauce, 3 teaspoons mustard, and butter mixture.  Boil until reduced to 2/3 cup, 2 to 3 minutes.

Thinly slice steaks; divide among plates.  Drizzle sauce over and serve.
