Fried Rice
1 | cup | diced ham or shrimp or both |
1/2 | cup | chopped roasted cashews |
2-1/2 | cups | cooked rice |
2 | tbsp | soy sauce |
2 | well-beaten eggs | |
3 | tbsp | oil |
green onions, to taste |
Stir-fry thinly sliced green onions in 1 tablespoon hot oil for 30 seconds. Add 2 well-beaten eggs and scramble until softly set. Remove and reserve.
Stir-fry 1 cup diced ham or shrimp or both with 1/2 cup chopped roasted cashews in 2 tablespoons hot oil for 2 minutes. Add 2-1/2 cups cooked rice, stir-fry 2 minutes. Add 2 tablespoons soy sauce, mix well then add gently the scrambled eggs.
