Sauce Remoulade

3		hard-cooked egg yolks
1/2	tsp	salt
1/8	tsp	pepper
1/2	tsp	powdered mustard
1	cup	olive oil
2	tbsp	vinegar, to taste
1		shallot, minced
		parsley sprigs, chopped
1	tbsp	minced chervil, gherkins, and capers

Force egg yolks through a sieve.  Blend with salt, pepper, and mustard.  Gradually heat in oil a few drops at a time, until all is added.  Add remaining ingredients and beat well.

Basic Vinaigrette

1	tbsp	Dijon mustard
3	tbsp	wine vinegar
1	tsp	sugar
1/2	tsp	salt
1/2	tsp	pepper
1/2	tsp	parsley or chives
1/2	cup	olive oil

In a small bowl, mix all ingredients together and whisk until well-blended.

Louis Dressing

2	tbsp	grated red onion
1	cup	mayonnaise
1/2	cup	chili sauce
2	tbsp	chopped parsley
1/3	cup	whipped cream
		grains of cayenne

In a medium bowl, mix all ingredients together until creamy.
